Fried porridge is a family favourite. It is very tasty and can either be eaten on its own or with chilli sauce.
- 2 cups porridge
- 2 tbsp all-purpose flour
- 2 tbsp dried prawns, chopped or minced
- 1 egg
- 25 g parsley, coriander or chives
- 1/2 tsp salt or to taste
- 1 tbsp light soy sauce
- 1/2 tsp black pepper powder
- Cooking oil
Method:
- The first step is to cook the porridge. [Or you may use the leftover porridge from your breakfast, lunch or dinner.] Scoop the porridge into a sieve and let the water drain from the porridge into a bowl. Keep the water for later use, if necessary.
- Transfer the porridge into a mixing bowl. Add the all-purpose flour into the bowl of porridge and mix them to form a batter.
- Add in the egg and mix well.
- Add chopped or minced dried prawns to the batter.
- You may add either parsley, coriander or chives into the batter.
- Season well with salt, soy sauce and black pepper powder.
- Note: The batter should be able to hold together in a nice consistency. If it is too dry, add in some of the porridge water. If too watery, add in some all-purpose flour and mix well.
- Heat some cooking oil in the kuali.
- When the oil is hot, using 2 spoons to shape the batter in a round ball.
- Drop it into the kuali and use the spatula to flatten it.
- After some time, gently turn over the batter to fry the other side.
- Scoop up onto a kitchen towel to soak up any oil on the fried porridge.
- Serve, either on its own or with chili sauce.
