Sometimes we need to do a little experimenting so that we can cook different delicious or tasty food for our family. So far, I have been using the same marinade for the chicken I wanted to roast, bake or deep fry. Thus, my family must be feeling a bit bored with them. I decided to change my marinade. As my family loves spicy food, I bought a packet of hot and spicy curry powder. I do not know how to use fennel powder or coriander powder. But it does not matter. I will use my nose to guide me on the amount to use. I always have freshly ground turmeric in my freezer. But I still bought a packet so that measurement is easier when I want to mix my marinade.
Ingredients:
- 1 kg chicken, cut into medium size pieces.
- 3 big heaps tbsp of hot and spicy curry powder (I am using the metal spoon that we eat rice with.)
- 1 tbsp coriander powder
- 1 tsp fennel powder (The smell is very strong so I added just 1 tsp.)
- 1 tbsp turmeric powder
- 6 sprigs of curry leaves (Just take the leaves.)
- 1 medium size onion
- 6 cloves garlic
- 1 inch ginger, peel and cut into pieces
- 1 egg
- 1 tbsp corn flour
- 1 tbsp rice flour
- 2 tsp salt
Method:
- Wash the chicken and let the water drain off. The chicken should be as dry as possible.
- Blend the onion, garlic and ginger.
- Put the hot and spicy curry powder, the coriander powder, the fennel powder and turmeric powder into a big mixing bowl. Stiir to mix them up.
- Add the blended mixture into the mixed spices. Stir to mix them up.
- Break an egg into the mixing bowl. Mix it up with the spices and blended mixture.
- Add the corn flour, rice flour and salt into the mixing bowl. Add in the curry leaves. Stir and ensure that the flours are evenly mixed with the spice mixture.
- The marinade is ready.
- Put all the chicken pieces into the mixing bowl. Ensure that every piece is coated with the marinade. Let the chicken be marinated for at least 4 hours.
- Heat up cooking oil in the wok. Make sure that the oil is enough for deep fry.
- Put the chicken into the wok. Do not stir the chicken otherwise the marinate will drop off.
- Slowly turn each piece of chicken to the other side.
- Once the chicken is cooked, remove them from the wok onto a kitchen towel to soak up any excess oil.
- Serve it with rice.
