Pork
I love using the bean paste, either minced or whole, in my cooking. Bean paste is made from soybeans; it is salty and sweet at the same time. I usually use it to flavour my food when I stir-fry bittergourd, stir-fry brinjal, stir-fry tofu, stew fish, stir-fry pork and chicken and many more.
My second daughter taught me this dish - Chicken Slices in Spicy, Sweet and Salty Sauce. I followed the same to cook the pork slices. It is yummy and will become a frequent dish for my family.
Ingredients:
- 200 g chicken or lean pork
- 1 red chili
- 1 inch ginger
- 5 cloves of garlic
- 2 teaspoon of whole or minced bean paste
- 1 stalk of spring onion, chopped, optional
- cooking oil
Instructions:
- Pound the red chili, ginger, garlic and whole or minced bean paste. Set aside
- Wash and slice the chicken or lean pork.
- Heat up the wok with cooking oil.
- When the oil is hot, pour in the sliced chicken or lean pork.
- Stir till the meat is cooked. Add some water if required.
- Pour in the pounded ingredients.
- Stir and let the sauce simmer for a while.
- (Optional) Sprinkle some chopped spring onion and stir.
- Dish up the meat and serve with rice.
