When my husband asked me to cook Tomato Pork, I was thinking 'Huh?' I have never heard of Tomato Pork. How do I cook it? He described what he wanted to me and here it is.
Ingredients:
- 2 red tomatoes
- 200 g lean pork, sliced
- 1 stalk of spring onions, cut into 1-inch length
- salt and light soy sauce to taste.
- Wash and cut 2 tomatoes into thin wedges.
- Heat up wok with some oil.
- When the oil is hot, put in the pork slices. Stir until they are cook. Dish out and set aside.
- Next,
- put in the tomatoes. Stir and use the ladle to press the tomatoes to flatten them. Let them soften.
- When the tomatoes have softened, pour the pork back into the wok.
- Stir the pork slices with the mashed tomatoes.
- Season with salt and light soy sauce.
- Sprinkle the spring onions into the wok and stir.
- The dish is ready for serving.
